i'm a murderer todae...
i killed 2 fish todae...
1st fish very notti...
jump under the fish tank...
so difficult to get...
so it suffered... by dying slowly...
the 2nd fish very guai...
let me catch...
so i let it have a quick death...
a blow of the hammer right onto it's temple...
that oughtta do the trick... :P
fish bite me todae... :(
no cuts... juz punctures...
but still pain loh... -_-

made pizza tomato sauce todae oso...
1ltr canned tomato w/o water
10g salt
5g black peppercorn
5g oregano (optional)
50ml extra virgin olive oil

for lunch and dinner...
ate braised duck rice w/ yam rice and lor mee respectively...
the staff rest room so uncomfortable...
went in to sleep todae...
sleep ½hr... wake up... den sit there can't get back to sleep... -_-
next time must go home and sleep liao...
but to and fro needs $1.30 bus fare... -_-
2 daes = 1 plate of chicken rice...

tomoro is off dae again... :)
happy happy happy...
so looking forward to tomoro...
hope my cough heal by the time i return back to work... :)

Pizza aint as fun as garde manger...
well... we shall see after 1 week later...

the person in-charge of me is not as nice as Vivian though... LOL...
he's the type of person who have no power...

abt SHATEC matters...
coz she feel like studying...
coz SHATEC teaches food cost control... etc etc...
i told her no need...
she already noe most of the things liao...
SHATEC only teach us the basics...
like... brown sauce... etc...
to which she replied... huh? u noe how 2 make brown sauce? teach me... -_-... Zzz...

anyway... her cold section is really pro...
her plating oso very nice...
excellent knowledge on cold food handling...
but yet... some of the things SHATEC teaches us... she dunno...

she asked wat else we learn...
so i showed her the photos of wat we did in practical in my HP...

she oso dunno how to make pastry items like tartlets and eclairs...
so i spent some time telling her a brief intro on how 2 make certain items loh...
wow... didn't now a trainee can actually noe more and the shifu... O_o
but still... i respect her for her knowlegde on garde manger... really the proz...

made pizza dough todae...
20kg flour
10kg water
600g salt
60g yeast
600g extra virgin olive oil

also used the machine to roll the dough into pizzas...
garde manger get to move abt...
coz have to do orders and such...
here i am... standing there still and not moving...
juz nailed to the ground making the pizza dough...
wah... legs aching sia...
at least when moving abt not so bad... Zzz...
anyway... this week till thursdae...
doing B Shift... Zzz...
dat's 11am - 3pm... den 7pm - 11pm...
so reach home late... sian...
A shift is 10am - 2pm... den 6pm - 10pm...
fridae off again... :)
sat & sun doing D Shift... 10:30am - 2:30pm... den 6:30pm - 10:30pm...

have also been thinking...
i've always been soending my money on others...
but never on myself...
things use till old liao still dun wanna buy a replacement...
but yet spending $60+ on a meal with others...
or buying gifts...
most expensive was if i remember... $500+
i dun even bear to spend $100 on myself... Zzz...

so now... i made up my mind...

Todae marks the official dae of my life in garde manger station...

tomoro will be pizza station for me...

todae is sundae...

like i said earliear...

every sundae is Buffet lunch in Prego...

$40 per pax

quite a resonable price though...

coz...quite a variety of foods for offer...

the oysters are quite fresh oso...

the oysters i opened yesterdae are actually STILL ALIVE!!!

COOL!!!

Vivian gave me an oyster to try...

touched the sides of the oyster... it actually MOVED!!! O_O

mmmmmmmm... sweet oyster with a dash of lemon juice...

heavenly...

there are also buffet platters up for grabs...

like... buffet cheese platter... buffet salmon platter and buffet parma ham platter...

they even have pizza for buffet... fresh from the oven...

and and and... pasta... made to order by one of our showmanship chef...

almost all of the ala carte items can be found in the buffet...

$40 is a very reasonable... (for me...)

if i'd known earlier... i'd have went to Prego for buffet b4...

oh well...

suddenly i feel like a computer...
have to remember wat customers wants in a short time...
at 1st i forgot a few... den have 2 ask again... Zzz...
but after some time... i got the hang of it...

followed by mango juice...
then rock melon...
and green apple...
orange juice...
we dun have pineapple... star fruit... strawberry... Zzz...
so many ppl ask for those...
some even ask for dragon fruit juice... O_o
a lot of ppl ask me wat juices i have...

Customer: "wat juices do u have?"
Me: " we got watermelon juice... red and green apple... papaya juice... rock melon juice... orange juice..."
Customer: "do u have pineapple juice?"
Me: "no"
Customer: "ok... den i'll have a glass of orange juice..."

OMG!!! i have to repeat it over and over and over again...

pastry girl gave us some left over buffet cake for us to eat...
jasline ate a bite and couldn't figure out wat mousse flavour cake it was...

actually... we learn a lot of things everydae...
juz dat they are so minute dat we dun usually notice them...

soak the lettuce in water until the leaves open up...
when they open up... you noe u can take them out...
juz this simple sentence made me learn something new...

everydae someone... (usually Vivian) will plate some salad displays for the display counter...
for use in anti pasto... (bearing some similarities with the asian combination platter... but consisting of various small portions of cold cut meat... cold pasta and cold salads...)

Vivian and i... 2 persons doing orders todae...
do until pim pom piam...
she did mostly all the anti pasto... and me... all the other ala carte orders...
like... caesar... misto... insa di mare... spinaci insa... caprasse... beef carppacio... etc etc...
so many orders...
so many anti pasto until all the salad display used finish... need to top up... -_-

anyway... Vivian is not our CDP... she is juz a com 1...
but i regard her as our unofficial CDP...
after all... she's the leader in the garde manger team...

the previous owner of my locker very good to me...
left a magnet... a clothes hanger... and 35 cents for me...
